Triphosphates
The short version
A phosphate used to hold water, bind moisture, and improve texture in processed meats, seafood, and wet pet food.
It's permitted and generally considered safe, but there are a few reasons to be mindful — like sensitivities in some people, debated studies, or intake limits. The Safety section below explains the specifics.
Where it comes from
Made by neutralising phosphoric acid with sodium carbonate and dehydrating the resulting orthophosphate blend at high temperature, which condenses it into a three-phosphate chain. Supplied as a white granular powder.
How it's used
Binds water and retains moisture in cured meats, seafood, and wet/canned pet food, improving juiciness, texture, and yield. Also chelates trace metals that would otherwise speed rancidity. Typical use is a fraction of a percent, expressed as phosphorus.
Safety profile
Shares the phosphate-group ADI of 70 mg/kg body weight as phosphorus (all added phosphates combined). Well tolerated at food levels; the concern is cumulative phosphate load from heavily processed diets, most relevant to chronic kidney disease — a notable point for older cats and dogs on high-phosphate wet foods.
Physical & chemical properties
White powder, freely soluble in water, alkaline in solution. A strong sequestrant of calcium, magnesium, and iron ions, which underlies both its water-binding and its antioxidant-synergist roles.
Regulation worldwide
Permitted internationally (EU E451; US FDA GRAS as sodium tripolyphosphate) with maximum levels set per food category and expressed as phosphorus.
