Sodium Pyrophosphate

A phosphate buffer and leavening acid used in processed meats, seafood, and baking powders.

Where it comes from
Produced by thermal dehydration of monosodium phosphate or disodium phosphate. Multiple forms exist (acid pyrophosphate SAPP, neutral pyrophosphate TSPP) for different functions.
How it's used
SAPP is a slow-acting leavening acid in baking powders that releases CO2 during heating rather than mixing — gives consistent rise in commercial baked goods. TSPP is used in cured meats and seafood for water retention, color stabilization, and texture.
Safety profile
ADI of 70 mg/kg body weight as phosphorus (combined phosphates). Long-term high phosphate intake from ultra-processed foods has been observationally associated with cardiovascular and renal effects, particularly in patients with chronic kidney disease.
Physical & chemical properties
White granular powder, soluble in water. Strong sequestrant of calcium, magnesium, and iron ions. Releases free phosphate ions in solution.
