Acesulfame K
The short version
A heat-stable, calorie-free sweetener about 200 times sweeter than sucrose — frequently blended with aspartame or sucralose.
It's permitted and generally considered safe, but there are a few reasons to be mindful — like sensitivities in some people, debated studies, or intake limits. The Safety section below explains the specifics.
Where it comes from
Discovered in 1967 by Karl Clauss at Hoechst AG. Synthesized from acetoacetic acid and isocyanate intermediates. Approved in the US in 1988 for tabletop use, broadly approved internationally through the 1990s.
How it's used
Used in diet beverages, sugar-free gum, dairy desserts, tabletop sweeteners, and pharmaceuticals. Frequently blended with sucralose or aspartame to mask each other's aftertastes. Heat-stable, suitable for baking.
Safety profile
ADI of 9 mg/kg body weight (EFSA). Not metabolized by humans — excreted unchanged in urine. EFSA initiated a re-evaluation in 2021 based on emerging data; conclusions pending. Some studies suggest possible effects on gut microbiota at high doses.
Physical & chemical properties
White crystalline powder, very soluble in water. Stable to heat and to acidic conditions. Slight metallic aftertaste at high concentrations.
Regulation worldwide
Permitted globally with ADIs in the range of 9–15 mg/kg body weight depending on jurisdiction.
