Ammonium Phosphate
The short version
Ammonium phosphate salts — yeast nutrient in bread and wine, leavening acid in some baking powders.

Where it comes from
Produced by reacting phosphoric acid with ammonia. Available as monoammonium phosphate (MAP) and diammonium phosphate (DAP) — both common as fertilizer-grade industrial chemicals; food-grade material is more rigorously purified.
How it's used
Used as a yeast nutrient (a nitrogen and phosphorus source) in industrial bread baking and wine fermentation — the yeast grows faster with the added ammonium. Also a leavening acid in some baking powders. Contributes to total dietary added-phosphate intake.
Safety profile
ADI of 40 mg/kg body weight (combined added phosphates, EFSA 2019). The phosphate fraction stacks against the total added-phosphate intake associated with bone-health and cardiovascular concerns in high-processed-food diets.
Physical & chemical properties
White crystalline powder, very soluble in water. Mildly acidic (MAP) or alkaline (DAP) in solution depending on the salt form.
Regulation worldwide
Permitted globally with maximum levels per category. Combined with all other added phosphates against the cumulative ADI.
