The simplest carboxylic acid — a strong antimicrobial used at low levels in non-meat preservation.

Why we flag it amber

01Origin

Where it comes from

Originally distilled from ants (the name comes from Latin formica). Today produced industrially from methanol + carbon monoxide via the BASF process. A natural component of bee and ant venom and many plant resins.

02Usage

How it's used

Used at very low levels (typically 0.1%) in fish marinades, fruit syrups, and some traditional preserved foods in EU markets. Largely displaced by other preservatives for direct food use. Major non-food use is in silage preservation for livestock feed.

Safety profile

ADI of 0–3 mg/kg body weight. Higher acute toxicity than acetic or propionic acids (the methanol-derived metabolism makes it more aggressive). At typical food use levels, exposure is well below toxic thresholds, but it carries more handling-safety concerns in industry than the other carboxylic-acid preservatives.

Physical & chemical properties

Colorless liquid with pungent odor; one of the few simple acids that is liquid at room temperature in its pure form. Miscible with water in all proportions. Strong acid (pKa = 3.75).

05Regulation

Regulation worldwide

Permitted in the EU for specific fish and fruit applications. Not approved as a direct food preservative in the US (where it is used only as a flavoring agent at very low levels).
