01Origin

Where it comes from

Discovered in 1879 by Constantin Fahlberg working in Ira Remsen's laboratory at Johns Hopkins. Produced industrially by the Maumee process from anthranilic acid or by oxidation of o-toluenesulfonamide. The oldest commercial intense sweetener — predates the 20th century.

02Usage

How it's used

Used in tabletop sweeteners (Sweet'N Low), pharmaceuticals, oral care products, animal feed, and many diet beverages. About 300–500 times sweeter than sucrose with a slight metallic aftertaste. Heat-stable and suitable for cooking and baking.

03Safety

Safety profile

ADI of 5 mg/kg body weight. In the 1970s, rat studies linked very high doses to bladder cancer, prompting US warning labels — these were removed in 2000 after subsequent research established the mechanism as rat-specific (rodent-specific urinary proteins). Currently considered safe by JECFA, FDA, and EFSA at normal use levels.

Physical & chemical properties

White crystalline powder, sparingly soluble in water (sodium salt is freely soluble — the typical food-grade form). Stable to heat, acid, and prolonged storage.

Regulation worldwide

Permitted globally. US warning label requirement removed in 2000. Canada banned it in food for decades but reauthorized it as a tabletop sweetener.
