Tertiary butylhydroquinone — a potent synthetic antioxidant common in fried snacks and frozen foods, with some safety debates.

Where it comes from
Synthesized by tert-butylation of hydroquinone, itself a petroleum-derived chemical. Introduced in the 1960s as a more heat-stable replacement for BHA in deep-frying oils.
How it's used
Widely used in fried snacks, instant noodles, vegetable oils intended for frying, frozen fish, and fast-food fries. Exceptionally effective in oil systems — outperforms BHA and BHT in retarding oxidation at high temperatures. Typical use levels 100–200 ppm.
Safety profile
ADI of 0–0.7 mg/kg body weight (JECFA). Banned in Japan and some EU member-state derogations for specific products. Animal studies at high chronic doses have shown forestomach lesions; the human relevance is debated. A 2021 Nature paper proposed immune-system effects at relevant exposures, fueling ongoing scientific discussion.
Physical & chemical properties
Beige to light tan crystalline powder. Very low water solubility; soluble in fats and oils. Heat-stable to the temperatures used in deep-frying.
Regulation worldwide
Permitted in the EU, US (FDA-approved), Canada, and most jurisdictions. Banned in Japan as a food additive.
