Processed Eucheuma Seaweed
The short version
PES — the cheaper, less-refined carrageenan, still containing seaweed cell-wall material.
It's widely considered safe at the amounts used in food, so we mark it green. The Safety section below has the details.
Where it comes from
Produced by alkaline cooking of Eucheuma and Kappaphycus seaweed without the alcohol-precipitation step that would remove cell-wall fibers. The result is a mixed carrageenan + insoluble cellulose product — cheaper but coarser than refined carrageenan.
How it's used
Used in pet food, lower-cost dairy products, deli meats, and ready meals where the slight textural compromise is acceptable for the cost saving. Functionally similar to refined carrageenan but with about 8–15% insoluble residue.
Safety profile
ADI not specified (combined with E407, EFSA 2018 re-evaluation). Some studies suggest carrageenan-class molecules may have inflammatory effects on gut tissue, particularly at the cellular level; the human dietary relevance remains debated. The same considerations apply to PES.
Physical & chemical properties
Off-white to tan powder. Disperses in cold water; gels in warm water at low concentrations. Forms slightly cloudier solutions than refined carrageenan because of the cellulosic residue.
Regulation worldwide
Permitted in the EU (since 1996), US (FDA-approved), and most jurisdictions. Separately listed from refined carrageenan because of the residual seaweed fraction.
